Christmas has come and gone

The anticipation and excitement of Christmas has come and gone. Even though were so far from home, more memories were made along with many Skype dates, and too much food. We had a great Christmas and now back into routine we go!

Were Back!

7 days flew by just like that. It was a beautiful island with perfect weather!

We spent most of our days laying by the pool and beach, eating, and drinking (taking full advantage of our all inclusive wrist bands). We had no complaints about the resort, great location and amazing food!

We met up with Mike & Brenda and their son Nash a couple of times ( it's always fun to get together with other Canadians). There resort was located 45 mins up the west coast, they took us to an amazing spot called Mogan (the locals called it a small Venice). We liked it so much we visited twice!

Home sweet home, tanned and well rested!

Off We Go!!

It’s been a busy week with: St. Lucia, a Vikings game, dinner date with some friends, and the team Christmas party.

Suitcase is packed..passport check, sunscreen check, sandals, sunglasses, summer clothes, check check check!! We are on our way to Grand Canary, Spain tomorrow morning for a long needed 7 day vacay! It will be nice to see the sun again; it’s been way too long. The 6 hours of daylight that Sweden is currently getting can take a toll on a person!

Wishing everybody a very Merry Christmas, sending some Swedish Christmas joy from our home to yoursJ

God Jul!

All Baked Out

The big guy was gone all afternoon to an away game, leaving me a date with the oven! Since were going to be in Spain most of the Christmas break I figured I didn’t need to do much Christmas baking.

Last year I made these delicious Oreo truffles, an easy no bake recipe (I had no access to an oven). They were a big hit so I decided to make them again this year. It’s a Kraft Canada recipe you can find it here:

Sprinkle them with nuts, sprinkles, or crushed candy cane to add a little Christmas fun.

Okay, so mine don't look as good as the picture on the website but they are DELICIOUS!
I also made WAY too many sugar cookies, this is the first time I’ve used this recipe (it calls for Philadelphia Cream Cheese instead of eggs). They are yummy! Mom-The cookie cutters worked great, thank you again for sending them. Gingerbread boys don’t exist in Sweden (not that I can find anyway).

The recipe makes a lot of cookies, I know they’ll all get eaten in our house!

My side of the suitcase is all packed for the Grand Canary, 6 more sleeps were both really excited!
I hope this week flys by: Tuesday is St. Lucia to find out more look back at my post One Month, looking forward to the Swedish tradition, hockey consumes Wednesday, and Saturday couldn’t come any faster can’t wait to be on the beachJ
Two more weeks till Christmas, can you believe it?! Still no snow in Nybro, looks like it will be a green Christmas since no snow is in the forecast.
Missing everybody at home, being away at Christmas is the hardest.
Have a good week; I’ll blog again before we leave.

Trip to Copenhagen, Denmark

It was a spur of the moment decision to go to Copenhagen today and I’m so glad Brenda and I did!  It was a 3 hour train ride from Nybro, including crossing over the famous Oresund Bridge. The bridge connects Sweden and Denmark; it is the longest road and rail bridge in Europe

We took a canal and harbor tour (Kanalrundfart) which was amazing, the best way to sightsee when your limited for time. We saw the famous “Little Mermaid” statue, wandered along Nyhavn (New Harbour) and of course checked out Strøget the number one shopping area in Denmark.
Here are some pictures from our dayJ

SURPRISE Birthday Boy!

I’ve spent the last 2 weeks planning a surprise Birthday party for my Birthday boy! It went off with a Swedish bang tonightJ

I had the boys come over after practise while our fellow Canadian took Ty back to his apartment to by us some time. The Birthday boy showed up and of course he was surprised!

I cooked two lasagnes (thanks to my Mom’s easy recipe), made a ceasar and pasta salad along with some French baguettes on the side. Everybody left with full tummies!
